This separator has been designed for the production of fresh cheese, cream cheese or labneh from skim milk or milk of maximum 3.5 percent fat content. The exact capacity is dependent on the parameters of raw and finished product. The machine is suitable for fully automatic cleaning-in-place. To ensure an optimum product quality a sterile air flow is applied to the hood space. Instead of this the hood space can be evacuated optionally. The product is fed into the machine through a closed-line system. A centripetal pump likewise discharges the whey in a closed system. The product feed and discharge in the bowl are hydrohermetically sealed and do not feature mechanical seals. The fresh cheese discharged from the nozzle bowl is guided to an integrated closed collecting vessel. The product connections can be designed according to DIN 11851 or ISO 2852 (TriClamp). The machine is driven by a 3-phase AC motor via a hydraulic clutch and a worm wheel gear.
The optional Westfalia Separator® wewatch® system permits permanent monitoring of bearing condition and smooth rotation as a basis for targeted preventive maintenance. The cast iron frame and the motor of the machine are completely clad with stainless steel.
All product-contacting parts are made of stainless steel. FDA approved materials are available for the seals.
