In obtaining rice starch by the wet process, a protein solution is formed in the first washing stage as a third phase in addition to starch milk and fine fibers. Adding acid precipitates the protein out of the solution so that a decanter can separate the rice protein and dewater it. The aqueous phase then runs through a special clarifier in order to obtain the residual protein it still contains.
